The History of Victorinox

There are many different types of kitchen knife available, each one serving its own purpose in the catering environment. From bread knives to cheese knives, and from steak knives to carving knives, there is truly a knife for every situation. With the mass amount of different knife styles available on the market, there is of course a wide range of manufacturers also. Some are better known than others, but all have the same aim in mind; to produce a wide assortment of quality knives to aid chefs' in their cooking.

Victorinox Knives

One such famous name is Victorinox. Producers of not only kitchen knives, but watches, Swiss Army knives and flashlights, they are the sole supplier of knives to the Swiss Army. They have been trading since 1884, and have been delivering their knives to the Army since 1891. The name 'Victorinox' is actually a combination of two words; 'Victoria' and 'Inox'. Karl Elsener, the founder of the company, chose the name 'Victoria' after his deceased mother, who died in the year 1909 The company continued to trade under the name Victoria until 1921. They have been using their emblem since that year - a cross in the centre of a red shield. In 1921, stainless steel was first introduced into the Victoria range of products and thus the term 'Inox' was added to the name - Inox being the French term for the metal. They have been trading as Victorinox ever since.

Victorinox Knives

Originally, the Swiss army had two suppliers of their Army knife; Victorinox and Wenger. In 2005, Victorinox actually bought the Wenger brand, and now supply solely to the Army. As both brands supplied army knives initially, the two brand names - Victorinox's 'Original Swiss Army Knife' and Wegner's 'Genuine Swiss Army Knife' remain intact. These remain the main product of the company, although their other ranges of products are fast becoming popular.

The Victorinox kitchen knives sold by the company do not bear the Swiss Army brand logo, and Victorinox also sells kitchen cutlery under the name 'Forschner'. The Victorinox kitchen knives collection is a fast expanding one, with both large and small knives available, as well as knife sets (and cases to house them) being sold by many catering equipment suppliers.

Smaller Victorinox kitchen knives include paring and turning knives. They can be bought individually, or as part of a set. The Victorinox kitchen knives sets come with a wide variety of knives, including a filleting knife, a turning knife, a serrated carver and a palette knife. They also include other essential cutlery items such as potato peelers and forks. These knife sets come in a roll bag, but external carry cases are also available to buy.

Victorinox kitchen knives are of a good quality and readily available from a range of suppliers. They come with a one year warranty and are great additions to any busy kitchen to help the chef (s) prepare the best food possible for their customers. If you are looking to purchase either single Victorinox kitchen knives, or a full set, then rest assured you have made a great choice.

Victorinox Knives

Different people have different needs when it comes to their knives. Victorinox has a lot of kitchen knives to offer to people with those different needs. They have a wide array of knives that range from the standard chef knives to diners' steak knives. Such knives include paring knives, a bread knife, shears and others. With this particular brand of knives, there simply is a lot of options to choose from.

The Victorinox Knife Has Sharp Blades:

The blades of the Victorinox sets are sharp. They are made from high-carbon steel that is stain-free. However, this particular knife is not ice sharpened but it comes with a sharpening steel which you can use to sharpen the blade. On the other hand, the blades remain sharp for a long time so you do not need to sharpen them very often.

The Knife Comes With Ergonomic Handles:

The handles of the Victorinox sets are made from fibrox which is a very durable material. Moreover, these handles are designed to be ergonomic and the handles have grooves that can be easily gripped by the hand. The ergonomic design of the handle makes it possible for this particular knife to minimize the damage of wrist strain. This feature is perfect for chefs and other people who handle food all the time. On the other hand, the handles also come with minimal crevices. This feature omits the chance of bacteria and other pathogens to live and multiply in the knife, which could be a risk to the food handler, as well to the people who eat the food prepared by a contaminated knife.

Forschner Fibrox 7-pc. Cutlery Roll Knife Set Overview

Victorinox, makers of the original Swiss army knife, has been crafting fine cutlery since the later 1800's. From Victorinox comes a line of fine cutlery and kitchen tools designed for accomplished and aspiring chefs at work or in the home. Each blade from the stamped line of cutlery is expertly made in Switzerland from high-carbon stainless steel and undergoes a special tempering process for an edge that can be resharpened again and again. The result is a knife that can keep its original sharpness throughout the entire life of the blade. Each blade is conical ground throughout its length and depth, which results in a wider break point with less risk of the blade breaking and less resistance for easier cutting, and then laser tested to ensure optimum cutting power and durability. Ergonomically designed to minimize wrist tension, the unique, patented Fibrox handles are slip resistant when wet. Plus, Stamped cutlery with Fibrox handles is approved by the National Sanitary Foundation (NSF). Although cutlery steel is naturally sanitary, materials and construction details of these handles minimize crevices that may otherwise offer hospitality to bacteria. Enjoy professional quality cutlery in your home at an affordable price with this 7-piece Cutlery Roll set from Victorinox. Set includes: 3-1/4-inch Parer, 5-inch Curved Boning, 8-inch Bread, 10-inch Meat Slicer, 10-inch Chef's, 10-inch Honing Steel, Canvas Knife Roll with Carry Handles and Shoulder Strap. Victorinox Swiss Army Knife Classic 53001 Product Review

Small yet handy. Simplicity at its finest. That is what you find with the keychain perfect Swiss Army Knife Classic 53001 by Victorinox. The Classic Knife is 2.28 inches long (58 mm) when closed. Not a bit bulky.

Victorinox Knives

This tiny titan of marvelous design will wind up being your most useful gadget priced under . In your pocket or on your keyring, it cannot be beat. Fifty-eight millimeters long but stuffed with enough useful features to delight. Key ring, toothpick, tweezers, small blade, scissors, and nail file with screwdriver tip - it's all it has and it is all you need for quick fixes.

Victorinox Knives

The Classic is always ready to jump into action when the need arises. There are no batteries to charge or any button to turn on. This is a tool that needs no preparation.

What is it good for you ask? A lot of things. I can tell you what I've used mine for. The key ring obviously allows me to keep my Classic right on my keychain. Sometimes I use it with my Classic still attached to my keyring and sometimes I take it off. The toothpick is self-explanatory. The tweezers are good for plucking and picking. The small blade comes in handy for opening boxes, letters and packaging material.

I've used the scissors to cut thread and yarn, snip string, slice paper, clip coupons and my nails. I've used the nail file to soften a rough edge on my fingernail. I haven't had a need for the screwdriver tip myself. I'm sure there are dozens of uses I haven't even thought of for this little Swiss Army Knife.

The Classic Swiss Army Knife comes in the usual red color everyone is familiar with when one thinks of Swiss Army. But there is actually a plethora of colors to choose from: red 53001 , black 53003, pink 53005, cobalt blue 53002, hunter green 53024, hunter green with a shamrock 53014, blue with a Star of David 54002, purple 53034, gray 53006, white 53007, yellow 53008, translucent amythest, translucent onyx 54213, translucent sapphire 54214, translucent emerald 54214, translucent ruby 54211, stayglow (glow in the dark) 53208, camouflage 53490, translucent pink 54005 and translucent citrine 54218.

When I say translucent, I mean that the scale (side of the knife) is see-through. These translucents have a very beautiful and interesting look to them. Very modern and certainly different from the same-old-red that we've all known and loved for several decades already.

If you don't think you'd ever use the screwdriver tip like me, there is a variation on the Classic that will suit you. Instead of the tip of the nail file being a small screwdriver, you can have the tip be pointy. This way it is really fantastic for cleaning your nails. Pointy is good. Part numbers for these special Victorinox Classics are as follows: 53181 red, 53183 black and 53185 pink.

The great thing about a quality item such as a Swiss Army Knife is its staypower. Swiss Army Knives last a lifetime ... unless you lose them! Some people have been known to hang onto the same pocket knife for twenty years. Talk about money well spent! What other product can you spend under for and be able to expect it to serve you and last for so long? Whether you are on your first knife for your tenth, you will always feel a little more prepared for what life throws at you if you're packin' a Swiss Army Knife.

The Victorinox Swiss Army Knife

Victorinox was founded by Karl Elsner in 1884. That year he opened his own cutlery business in Ibach-Schwyz, Switzerland. Before opening his business Karl had spent time in Paris and in Tuttlingen, Germany doing his apprenticeship. At Karl's cutlery shop the grinding and polishing machines were powered by a waterwheel which was powered by the Tobelbach brook.

Victorinox Knives

In 1891 the Swiss Army first received the soldier's knife from Karl Elsner and on June 12, 1897 the Swiss Officer's and the Sports knives were patented. Karl's company was originally the only supplier of Swiss Army Knives to the Swiss Army. In 1908 his company had to share the supply contract with Wenger. The companies eventually reached an agreement that allowed Victorinox to advertise the Original Swiss Army Knife. Wenger was allowed to advertise the Genuine Swiss Army Knife.

Victorinox Knives

Karl Elsner started using the cross and shield to identify his knives in 1909. The cross and shield is still used to identify a Victorinox Swiss Army Knife to this date. This same year his mother died and he decided to name his company "Victoria" after his mother. In 1921 stainless steel was invented and the company started using stainless steel to make the Swiss Army Knife. Stainless steel was also called "inox" (the French term for stainless steel is acier inoxydable). "Victoria" and "inox" were combined to create the company name Victorinox.

After world war II American PX shops started selling the "Swiss Officer's Knife" in large quantities to American soldiers. The soldiers started calling it the Swiss Army Knife for short and the name has stuck.

In 2002 Victorinox took over the other Swiss Army Knife maker, Wenger. Victorinox has said they intend to keep both brands of Swiss Army Knives intact. The Swiss Army Knife by Victorinox is a standard piece of equipment for NASA Astronauts and the Swiss Army Knife has been taken on treks to Mt. Everest and the Antarctic. Currently Victorinox has five lines of products. In addition to their Swiss Army Knife line they have Household & Professional knives, Watches, Clothing and Luggage.

As you can see the Swiss Army Knife by Victorinox has a long history and is depended on by many people under the harshest conditions. Victorinox as a company has a long history of quality and that quality can still be seen in their products today. Sharpen your knife regularly. This is not only a good advice for maintaining the usability of your pocket knife, but a safety measure too. A sharp blade is safer because you will not be applying too much force when cutting something lessening the chances of slipping.

From the Manufacturer

Who is Victorinox?
Although Victorinox is known the world over as the creator of the Original Swiss Army Knife, the company started out in 1884 as a cutlery workshop. By the time company creator Karl Elsener delivered his first pocket knife to the Swiss Army, his cutlery business was already booming. Over the next century, Victorinox cutlery became a top-rated choice among professionals worldwide, with over 300 blades to offer.

Victorinox knives have regularly appeared as highly ranked and recommended kitchen tools in Cook’s Illustrated, Men’s Health, The Cincinnati Enquirer, New York Magazine, and Natural Health, just to name a few. In 2009, the company announced a partnership with professional chef, Daniel Humm, of Eleven Madison Park in New York City. In addition, building on the success of its cutlery business, Victorinox has brought all the same quality and expertise to a wider range of products and accessories, including other kitchen tools, pocket tools, watches, luggage, and clothing.

Who is R.H. Forschner?
Victorinox had been a staple in European commercial cutlery for over 50 years when approached by New York’s R.H. Forschner, known since 1855 as a builder of scales for butchers, to be their sole cutlery supplier. The two companies joined forces in 1937, and R.H. Forschner subsequently became North America’s dominant professional brand, as ubiquitous in the bustling meatpacking plants of the Midwest as it is in the gleaming, four-star restaurant kitchens of Midtown Manhattan.

As a division of Victorinox/Swiss Army Brands, R.H. Forschner marketed cutlery under the brand name “RH Forschner by Victorinox” and distributed to the commercial, food service, and retail trade classes. That brand has been considered a top choice of professionals worldwide with over 300 styles of blades bearing the R.H. Forschner name. However, in 2009, in conjunction with Victorinox’s 125th anniversary, the company, Victorinox Swiss Army, Inc., has decided to remove the “RH Forschner” name from all blades. Blades thenceforth only include the “Victorinox” name.

What is a stamped blade?
A stamped knife can usually be identified by the absence of a bolster. Stamped blades are cut into their shapes from cold-rolled pieces of steel and then ground, tempered, and sharpened. Creating them requires many less steps than forging and results in lighter, narrower blades. Some professionals prefer the thicker, heavier forged blades, but many pros, who spend much of their day cutting and slicing, enjoy a lighter knife since it’s less fatiguing and easier to manipulate at speed.

Stamped knives are easier to produce and therefore less expensive. They perform very well and can approach the quality of a forged blade, but not the weight or feel. Victorinox manufactures a complete range of stamped blades with unique, patented Fibrox handles and they are considered among the greatest values in the knife industry.

What knives do I need to own?
Knife choice or selection is determined by many factors--size, function, style, and preference. The most important factor is function. Different knives have different uses. It is important to use the proper knife for a specific task, since proper knife selection and the use of a proper-sized, sharp knife make for safe cutting. General kitchen tasks and the knife to use for them are as follows:

Paring: The most common to own and use, a paring knife is generally for small cutting jobs and peeling of vegetables or fruit. The blade size is usually from three to four inches. Choose the shape and size to fit your hand. Since this is one of the more versatile knives, owning more than one is recommended.

Chef's: The most important tool and essential to every cook, a chef‘s knife is most often used in a rocking method to mince, dice, and chop vegetables and herbs. This one is known as the chef’s best friend.

Slicer: Most commonly used to slice meats, poultry, and seafood, the slicer is an important companion to any host or hostess.

Boning: As its name suggests, a boning knife is used to trim or remove meat and fish from the bone.

Bread: Designed with a special edge, a bread knife makes easy work of cutting through crusty bread, pastries, or any item with a crust and a soft interior.

Fillet: Most often used by pros and seasoned home chefs, the fillet knife is used to fillet meat and fish.

Cleaver: An important addition to any collection, a cleaver is often used to cut or chop through bones.

Santoku: This knife combines the features of a cleaver with a chef's knife. The curved blade helps the rocking motion used for chopping, and the wide blade works well for scooping sliced food off a cutting board and for crushing garlic. The santoku can also be used to slice meat and has a narrow spine for making thin cuts.

Utility: An all-purpose knife often referred to as a sandwich knife, the utility knife peels and slices fruits and vegetables, and even carves small meats.

Shaping: With its curved blade, a shaping knife is great for small precision cuts where control is essential, such as peeling, trimming, or garnishing.

What are the different knife edges and what do they do?
Straight: The vast majority of Victorinox knives come with a straight or fine edge. This means it has a perfect taper along the blade and no serrations. It is designed to cut without tearing or shredding.

Serrated: An edge designed with small, jagged teeth along the edge.

Scalloped: A blade with waves along the edge generally used to cut breads with a hard crust and soft interior, as well as tougher-skinned fruits and vegetables.

Granton: This edge has hollowed-out grooves or dimples on the sides of the blade. These grooves fill with the fat and juices of the product being cut, allowing for thin, even cuts without tearing. Even with the grooves, these are still straight-edge knives and can be honed with a sharpening steel.

How should I care for my cutlery?
After use, knives should not be allowed to soak in water. The best practice is to hand wash and dry them immediately. This is especially true if they have been used on fruit or salty foods, which may cause some staining, even on stainless steel. Most knives require very little maintenance and it is worth the effort to protect your investment.

Though Victorinox knives are dishwasher safe, this is strongly discouraged. The dishwasher’s agitation may cause damage. Additionally, harsh detergents can be harmful and cause pitting and spotting on the blades. The handles may also discolor and develop a white film with constant use of the dishwasher. Plus, intense heat associated with dishwashers is not good for the temper of the blade.

How do I keep my knives sharp?
All quality knives require proper maintenance to keep them in perfect cutting shape. The best of edges will quickly dull if it strikes metal, glass, or Formica. A wooden cutting board makes the best cutting surface. And, if a slip occurs, a proper cutting board is safer for the user. Frequent use of a Victorinox sharpening steel will keep blades in tip top working condition. All straight-edge knives need steeling to keep their edges.

How to ""Steel"" a Knife
1. Hold the steel firmly in your left hand with the guard positioned to stop the blade should it slip.
2. Hold the knife in your right hand and place on top part of steel as shown.
3. Raise back of blade one-eighth inch.
4. Now, moving the blade only, draw it across the steel in an arching curve, pivoted at your wrist. The blade tip should leave the steel about two-thirds of the way down.
5. Repeat the same action with the Blade on the bottom side of the steel. Always maintain the same pressure and angle on both sides of the steel.
6. Repeat five or six times.

When a sharpening steel no longer does the job, it’s time to take the knife to a qualified knife sharpener who will place a new edge on it. This, along with use of the sharpening steel, will give you many years of sharp, safe blades.

Please note that electric knife sharpeners can be harmful. They have to be used carefully as they remove too much metal, can harm the temper of the blade, and most important can change the factory-applied edge angle.

How should I store my knives?
Safety is the biggest concern of storage, both to the user and to protect the knife's edge. Choices include a knife magnet, knife block, drawer insets, and also individual knife protectors.
